Pepperoni Pizza Puffs


3/4 cup flour
3/4 teaspoon baking powder
3/4 cup whole milk
1 egg, lightly beaten
4 ounces mozzarella cheese, shredded (about 1 cup)
4 ounces pepperoni, cut into small cubes (about 1 cup)
1/2 cup pizza sauce
2 Tablespoons finely chopped fresh basil

Preheat oven to 375o.  Grease a 24-cup mini muffin pan.  In a large bowl, whisk together the flour and baking powder; whisk in the milk and egg.  Stir in the mozzarella and pepperoni; let stand for 10 minutes.

Stir the batter and divide among the mini-muffin cups.  Bake until puffed and golden, 20 to 25 minutes.

Microwave the pizza sauce until warmed through, then stir in 1 Tablespoon basil.  Sprinkle the puffs with the remaining 1 Tablespoon basil.  Serve the puffs with the pizza sauce for dipping.

All my peeps

Peeps (branded as PEEPS®) are small marshmallow candies, sold in the United States and Canada, that are shaped into baby chickens, rabbits, and other animals. There are also different shapes used for various holidays. Peeps are primarily used to fill Easter baskets, although the Just Born company is trying to change that by introducing new shapes and advertising "Peeps - Always in Season". They are made from marshmallow, sugar, gelatin, and carnauba wax.

Ami's Mommies

Ben Di and I met up with Becca and another Kevin because Ami's moms were in town tonight. We ate vegetarian japanese food in Berkeley. It was great! I loved the food and the people.

Richer in heart-healthy omega-3s than salmon, loaded with more anti-inflammatory polyphenols than red wine, and packing half as much muscle-building protein as chicken, the walnut sounds like a Frankenfood, but it grows on trees. Other nuts combine only one or two of these features, not all three. A serving of walnuts—about 1 ounce, or seven nuts—is good anytime, but especially as a postworkout recovery snack. SUBSTITUTES: Almonds, peanuts, pistachios, macadamia nuts, hazelnuts FIT IT IN: Sprinkle on top of salads; dice and add to pancake batter; spoon peanut butter into curries; grind and mix with olive oil to make a marinade for grilled fish or chicken. HOME RUN: Mix 1 cup walnuts with ½ cup dried blueberries and ¼ cup dark chocolate chunks.

Acai is called a superfood for many reasons. The berry naturally contains huge amounts of Antioxidants, Vitamin B1, B2, B3, Vitamin E, Vitamin C, Phosphorus, Calcium, Potassium, Fiber, Proteins, as well as good fatty acids.

The incredible levels of antioxidants in Acai help you feel younger, and can also possibly help with medical problems such as cancer. Research has also shown that antioxidants can help regulate cholesterol levels in your body.

Acai has two essential fatty acids known as Omega 6 (Linoleic acid) and Omega 9 (Oleic acid). Research shows that Omega 6 helps lower LDL, which is the cholesterol that harms your body, while Omega 9 fatty acids lower LDL and maintain HDL (good cholesterol) levels. Acai's high levels of antioxidants also play a factor in maintenance of vascular cardiac system, which is important for better blood circulation.

The dark purplish color of the berry is due to the polyphenolic compounds present in the berry. One of the main compounds being researched is called anthocyanin. Anthocyanins are a group of Flavonoids widely distributed in plants and that give a reddish or purplish color to fruits such as blackberries, grapes, and raspberries.

Yesterday

Last night was a good night. We went to eat at an amazing place called Annalien. Honestly, I can say it was some of the best food I have ever eaten. Lindy and Tony met us there and it was a blast experiencing the Vietnamese cuisine together. Just next to Cole's Chop House on Main St is where this exquisite restaurant is located. It was nice to relax, be with friends and above all, decompress. Earlier in the day, I was in a different space.
A kid at school had a major blow-out. The absolute aggression and pure rage of him was unsettling. Screaming and cursing became his only form of communication. It was a challenge to remain calm and rational as I was confronted with, and challenged by, the exact opposite. Luckily, I work with very skilled people who were clear and firm. We took the necessary steps to talk him down. I felt good about my contributions to diffusing the issue. The police officers helped a little bit, too.

So relaxing with a plate of scrumptious cha gio in a casually elegant restaurant was well earned last night.
